I'm a type on diabetic. For me It's not really the sugar it self that is the issue but the overall carb count. I can have most anything with in reason and adjust my insulin to cover it. Lower fat is better because high fat/ carb foods I actually won't see a large rise until much later. Often this can mean by sugars dropping too low before. Climbing too high. You'll also want to avoid and thing like juice soda or like commercial frosting etc.. those hit too fast and the rise can reach dangerous levels before medication can kinda k in.
A basic cookie even traditionally made or gfs is usually a fairly safe choice though.

Thank you everyone for the great insights! I plan on making the homemade cookies that I was going to and I will also include a note with the carb count.

I do all my baking with about half the sweetener that the recipes tend to call for anyway for my own family.

So that's good.

I did talk to the teacher to see how the child usually handles birthday treats that other kids send in and she said that he just checks his numbers before to determine if he will have a treat or not. So I'll send in the information and let them decide how to handle it.
