Re: What are you eating in October?
Dh made me a double bacon bbq cheeseburger with mushroom, onions, and no bun. I ate half, and am going to save the rest for tomorrow. Also going to heat up a sweet potato with cinnamon butter and a little honey or brown sugar on top here in a few. The kids had a late lunch, so we are just letting them snack tonight on whatever.

Re: What are you eating in October?
Greens worked wonderfully. I added shredded cheese, sour cream and leftover roasted broccoli.

Re: What are you eating in October?
I made tandoori chicken yesterday. It was good. I used this recipe but baked it instead of grilled: https://www.simplyrecipes.com/recipes/tandoori_chicken/
---------- Post added at 12:43 PM ---------- Previous post was at 12:20 PM ---------- I just decided to make this tonight: https://cafedelites.com/crispy-boneless-chicken-thighs/ Boneless skinless chicken thighs were on sale this week so I bought a big pack. This looks fairly easy and delicious and I'll serve wtih roasted veggies and mashed potatoes.

Re: What are you eating in October?
Tonight I am trying the Hasselback potatoes we discussed earlier. I will cook the whole bag and make mashed potatoes for snacks.

I put a roast for Pork Carnitas in the IP. Prima asked for Mexican Rice on the side. Probably broccoli on the side as well.

Re: What are you eating in October?
Last night it ended up being hot chips because we had a busy work day and then our poor dog had another seizure
Tonight DS #1 is cooking a 2 course Japanese dinner....just got back from getting ingredients with him.
