My crock pot fizzled and died this morning! 10 minutes AFTER I put dinner in it.
I transferred it all (Creamy, Cheesey Buffalo Chicken) to the the IP, but realized that the cream cheese and yogurt in the sauce probably won't do well under pressure, so I put it on slow cook function. I'm an IP newbie and have never done this before. I hope it works!

I made up a sheet pan dinner to use up some things I had on hand: chicken tenders, yellow potatoes, sweet potatoes, and parsnips. I will also serve green beans and a lettuce and radish salad with a creamy parmesan dressing.

I'm making a low carb hamburger, cabbage, and cheese casserole tonight. It's insanely fat. It has cream cheese, sour cream, heavy cream, and cheddar cheese.
It smells awesome. I hope everyone likes it.

It is after 7 and still has 10 min to go this whole having one car and being 30 min away fro dh's new work is making these special dinners that can't be something that gets dumped in the instant pot hard. This smells wonderful but the girls might be too tired to enjoy it.

My BFF gave me the recipe for Crock Pot Mississippi Pot Roast so I have it in now. I never seem to have luck with roasts....they aren't tender, but she swore by this so I'm hoping it's good! I'm making rice to serve it over and roasting cauliflower as sides.

Aldi has a really good Tikki Masala simmer sauce. We eat it often-- I cut into slices and marinate in lemon juice, garlic, and salt boneless skinless chicken thighs, then sauté those with sliced bell peppers in coconut oil for 5-7 minutes, then add simmer sauce and simmer for 15 minutes. I serve with toasted naan (Aldi also has delish naan, garlic or plain) and/or coconut rice.
I have a pork roast marinating now to cook tomorrow, it's a new recipe for Pernil Asado I got from Washington Post cooking section. We'll see how it turns out! Will probably serve that with rice and sautéed green beans for dinner tomorrow.

I tried these healthy chicken enchiladas tonight. I'd use less spice next time, but they were so good, especially for 194 calories per enchilada! I just wish that everyone would love everything I make . DD1 and DS thought they were okay. DH and I liked them a lot. DD2 LOVED them and couldn't stop saying that I better make them again. There is never a consensus on my meals!

Those enchiladas look so good! We love chipotle seasoning so I think we will like them.
I made baked chicken thighs last night and we had leftovers tonight.
