cant really add to whats already been said. We love roasted veggies. DH wouldn't touch things like broccoli, asparagus, squash, brussle sprouts but he loves them all (except squash he just hates that in any form).

We roast a lot of cauliflower and Brussels sprouts. We roast it all in bacon grease! Lots of it! Sometimes, we chop up bacon and add it in, but that gets tricky to get the bacon crispy at the same time as the veggies. It's also tasty to throw in whole cloves of garlic and chopped onions.
My friend often does the "big mix" of root veggies (including garlic and onions) and it is soooo good!! I just like to keep things simple and do one veggie at a time. I think it needs to be said - if they don't caramelize, then they aren't properly roasted. The flavor will *not* be the same. Cook until well browned.

If you have a Costco membership, they may carry Chosen Foods Avocado Oil (Huge bottle for $9!). This is my new go-to oil for roasting. It's very neutral, unlike coconut, and safer for high temps than olive oil. I mostly do brussel sprouts (halved or quartered) or potatoes, but you ladies are making me want to try some new things!
Oh...for the potatoes...we have been roasting them with avocado oil, salt, pepper and Italian Seasoning. Reaaallly good.

I often mix the expeller pressed CO with the bacon grease to stretch the bacon grease. It's very versatile!

I love roasted vegetables and basically do what everyone else has said. Pick a vegetable, chop it into bite size pieces, coat it with olive oil and salt and then stick in the over at 350 uncovered and pull it out when it looks done. Also don't worry about burning them, they get a really nice flavor if they are a little crispy.
