August Main Meals
Please post what you are having for your main meal each day. We'd also love the recipes if you have them and we'd love to see pictures, too. I know I've gotten lots of good ideas from these threads to vary my menu planning from the boring same old recipes to introducing some exciting new recipes that have become favorites. So please join us!
Tonight we are having cheesy burrito chicken and Mexican rice.

I am thinking about making chicken scampi. I know it should be shrimp, but I am allergic to seafood and my husband loves scampi. So that's what we can do.

We had zucchini pizza last night - another summer fave. The crust is 3 c of shredded zucchini, a cup of whole wheat flour, two beaten eggs and a little salt + whatever seasoning you want. Spread that out on a stone (a very well cornmeal-ed stone...or maybe a silpat would work better, I haven't tried, but it tends to stick terribly) and bake at 450 (or is it 425? I'll double check if anyone cares) for about 20 minutes. Take out and top with mozzarella, green onions, and lots of sliced tomatoes, plus oregano, basil and garlic powder.
The boys had peas with it (I am really low on fresh vegs atm) but DH and I had my favorite salad of this summer: spinach, blueberries, goat cheese, praline pecans and balsamic vinaigrette. Tonight we're eating out--DH has a meeting with a guy from church so the wives and kiddos are going to hang out while they work and then have dinner afterward. Not sure where.

Sliced chicken breasts over mixed greens that wilted in the skillet with chicken drippings while I sliced the chicken. Steamed buttery potatoes on the side. I'm mostly here to subscribe too. You guys have so many good ideas!
