Well, I actually really prefer that Michigan made this change a few years back that we don't start up till after Labour Day. But I grew up in Canada, and that's how it is there, so you know, however it is when you're a kid is just the epitome of normal.

I have a plan :woot I am determined to actually cook this year. School starts Tuesday, and I have a plan for success. I'm going to make easy meals and experience success and build my confidence in my time management skills
Tomorrow: Bang Bang Shrimp Tuesday: Crockpot Pot Roast Wednesday: Salmon, mac & cheese (for DH), and green beans Thursday: Chicken Parm Casserole Friday: Leftovers or breakfast foods I can do this...right? Last school year was SUCH a disaster We ate so much processed stuff and take out it was embarrassing

I skipped the steak seasoning and the mushrooms. I can't give you an exact amount on the pasta...I probably used 12-ish ounces. I wanted it nice and saucy so it wouldn't dry out too much in the oven. So I cooked a whole box that was maybe 13.5 oz (figuring, this is an old recipe, maybe it was 3/4 of a 1-lb box?) and added most but not all of the noodles, gradually adding and mixing it up to see how it looked. I cut the noodles up quite a bit so it would mix more easily. It ended up taking way more than 30 min to heat through, and that was after splitting the recipe into 2 8x8 pans. I bet I heated my 8x8 a full 45 minutes, and I covered it at least half the time so it wouldn't dry out. I also broiled it for three minutes at the end because burnt cheese is my fave It was delicious, if I do say so myself

My youngest and I made hamburger soup yesterday, with fresh baked bread. Unfortunately, I had to teach her the lesson about running to the store for ingredients one will assume they have on hand, and can't really substitute
Tonight, I made a totally random, thrown together version of something I found on pinterest. It was meat and cheese tortellini, with added zucchini "noodles" (I love my spiralizer!). I made a sauce with sun dried tomatoes, turkey smokies, garlic, cream, cream cheese, and some parmesan. Served with leftover bread, and sliced raw veggies. Only one person in the family recognized the zucchini noodles as zucchini |

Yes Virginia, you can do this! My sister works full time out of the household and she LIVES on crock pot meals. You can even put everything all together the night before in the crock pot, put the inside pot in the fridge overnight and in the morning you just plop the crock in the pot and come home to a delicious dinner.

I made this skillet spinach bake
http://www.tasteofhome.com/recipes/spinach-skillet-bake and served it scooped over baked potatoes. It was a real hit and it made a LOT! I used fresh mushrooms, gf flour, and added lots of extra veggies that I had on hand. Cabbage was 29 cents/pound so I'm adding it to everything, lately. (I always double the spices in recipes.) |

When my big freezer went out, I had some ground beef that had thawed but was still good so I browned, divided, and froze it (no seasonings). Today I thawed a bag, seasoned it like I would burgers, mixed it with melted cheddar (with cream), and we ate it like burgers. Fries on the side. (We'll eat veggies later)
