Roasting veggies
People talk about this all the time help me. I didn't grow up having roasted veggies, and I don't think to make them.
Give me your guideline, and recipes. I want to eat more vegetables as it gets colder and roasting them seams like a good idea.

Not so helpful maybe... but I hate hate hate roasted veggies (other than potatoes)... but I do really like stir fried veggies with sauces or cooked in a touch of soup stock.

Olive oil and kosher salt! I love roasted veggies. I pretty much roast everything on 400. Cut the veggies pretty much all the same size. I do carrots, butternut squash cubed, broccoli and sweet potato cubed up and roasted is awesome!

The only thing I have to add is I roast Brussels sprouts quite a bit as well.

I roast everything pretty much any vegetable you can think of, cut into same size pieces, toss with olive oil, sprinkle with kosher or sea salt salt and maybe black pepper if you like, roast on 400 until done. I don't think I ever ever tasted something roasted that I didn't like. You can get a similar effect using a cast iron skillet on med high, olive oil and kosher salt and cook until starting to blacken. Really, think of any vegetable and it probably tastes good roasted.

We roasted veggies too. I mostly do frozen for quick sides. Broccoli, cauliflower, Brussel sprouts, potatoes, etc.

Roasted veggies are my absolute main stay except when it's too hot to turn on the oven.
You can roast almost anything. I chop and throw on a rimmed cookie sheet. Drizzle in olive oil. Salt and pepper, and roast at 400 for probably about 30-60 minutes, depending on what it is, and how cooked you like it.

My favorite blend of roasted veggies is carrots, parsnips and sweet potatoes. I used this recipe but added the sweet potatoes as well. It takes longer than 40 minutes in my estimation for the veggies to get caramelized. This is recipe is also really good: Roasted Cabbage.

Pretty much what everyone else wrote. . I use olive or coconut oil, salt, rosemary, stir everything so it's coated in oil, and bake until well browned. My kids devour it! They complain when I don't make two pans!
One thing I've found is that if you try to do two pans, one over the other, the bottom pan is more steamed than roasted. So switch the pan positions halfway through or do them separately. In summer I roast veggies on the grill in my cast iron skillet. |

My favorite roasted veggies is a combination of equal parts white potatoes, orange sweet potatoes, and white sweet potatoes with red and green bell peppers. I don't use oil but I use a little bit of Lowry's seasoned salt. You can decide on covered vs. uncovered (or some combination) depending on how crispy you want them.

Tonight I chopped up sweet and russet potatoes,red onion, and carrot. Mixed with olive oil,balsamic vinegar,garlic powder, salt and pepper. Put it at the bottom of the pan laid chicken thighs with skin on top at 400 for an hour. I took the chicken off and roasted the veggies for 5 more min. It was awesome. The chicken fat/juice mixed with the veggies was very good

I'm a serious roaster
I love roasted cabbage with some olive oil and balsamic, and minced garlic. Carrots are *amazing* with some melted butter, real maple syrup, and salt. Sweet potatoes get coconut oil, almost everything else gets olive oil. Broccoli sometimes with minced garlic, or not. I love cauliflower nearly burnt Peppers and zucchini are fabulous together with some olive oil and balsamic. |
