Default Yum diddly scrumptious thai veg soup

I got a blender with some Christmas money and have been creating lots of soups and this one turned out really tasty so I thought I would share!

1 large onion
1/2 large butternut squash
2 medium carrotts
3 garlic cloves
large piece of ginger (5x3x1cm)
5 florets of brocolli
small handful of fresh corriander
zest of half a lime and a small squeeze of juice
1/2 pint of chicken stock
dash of coconut milk or some frozen creamed hard coconut.

fry onion and garlic in a little olive oil add ginger
add stock and other roughly chopped veg
cook until tender
add corriander and coconut
blend until smooth
if needed, add some more water to make it thinner.

I am half-Indian (and my mom grew up on a British "colony")...so I am used to the ingredients like fresh coriander (cilantro), aubergine, courgettes, etc...but I have confused my share of friends when I give them my recipes...b/c they are going at those ingredients.
