Corn bread from a mix and soup from a box but I used the oven and the stove! And except for one box that I think ended up in the girls room the kitchen is unpacked.

Last night I made spaghetti bolognese in the crockpot and served it over gf spaghetti and was able to freeze three bags of the sauce for later dinners.
Tonight we had lemon pepper tilapia, baked potatoes with broccoli cheese sauce (thanks, MaybeGracie ), and Greek salad. Tomorrow night will be crockpot ranch pork chops, rice, cauliflower, and spinach and arugula salad with lemon vinaigrette.

I did butter chicken over rice for lunch, and made sub sandwiches for dinner since we went to ds's baseball game. Also made a flourless Blondie made with chickpeas and peanut butter. It was very good!

Dd asked for chicken salad, so we had chicken salad sandwiches and oranges for dinner. Sounds like a summer lunch instead of a winter supper, but it was a nice change.

I made chicken tortilla soup and had salsa and chips as a side.
I really need to get intentionally about getting some basics now that the kitty is mostly unpacked. I was missing things like onion and garlic. But I had hummus and in a pinch that goes a long way twards a flavorful broth. Sent from my Pixel 2 XL using Tapatalk

I made Pioneer Woman's Chicken Pie minus the pie part for supper tonight.
For tomorrow, I made a big crockpot of chili for our fellowship dinner at church.

We have a super busy week, soccer has started back up full time and my ds has a band concert and my dd an orchestra concert and girl scouts this week.
Therefore I am going simple. Salad and soup (canned ) one night, it's a good one when we are going all directions because I can pre-make everyone's salad and then just heat up soup seperately. Homemade pot pies (one chicken, one vegetarian) - this will be my only official dish this week. I have some frozen shrimp I may do with something but don't know what yet. Quesidillas with mexican rice (or tacos if dh get beef). Then we always have beans, rice, pasta, and other foods on hand so we will see. I think we are out of cream pasta sauce, but can put on the list - dh will grocery shop during his lunch hour tomorrow. What else is healthy but super easy. Maybe can be made ahead of time?

Easy crockpot meals
Chicken tacos - chicken breasts, rotel or salsa, taco seasoning Italian beef Beef fajitas Spaghetti bolognese Sesame chicken BBQ chicken - chicken breasts, bbq sauce Ham - I buy no nitrate, no antibiotic, hormone free from Aldi already sliced, and add pineapple slices to it and heat in crockpot and I serve it with these au gratin potatoes also make in crockpot or these crockpot mashed potatoes. All of those meals can be frozen ahead of time and then just plopped in the crockpot and cooked all day to have dinner ready when you get home. The one exception is that I don't pre-freeze the spaghetti bolognese. I just make it the day off and then freeze the leftover sauce for another day. Also don't freeze the potato recipes.

I have a vegetarian so if I do a crock pot meat dish, I still have to make a vegetarian dish, so it doesn't reallly help on the super easy nights. I do a lot of mexican in the crock pot (with chicken) and then just do beans for dd.
I also don't make meat soup because soup is one of dd's favorite foods and ds likes meatless soups too - so just always made vegetarian because it's easier and everyone likes it.
