Super easy. And if I say easy, i mean easy. Sometimes you people give me an "easy" recipe and it's not so easy.

Oil in a large pan or wok* plus onion and garlic. *I generally dont use the wok anymore so I can make a bigger portion with a BIG DEEP pan I have.

We’re getting into winter dinner recipes now - it was chicken casserole tonight. By Spring I’m always ready for lighter meals, but right now I’m looking forward to casseroles and stews, dumplings, roasts, pies....

It is absolutely both of those! I love it because it's SO easy and the kids absolutely love love love it. I told my 19 year old that it's an easy to master recipe to take with him when he moves out and can do himself, even with a very limited budget.

I put rice, chicken broth, canned tomatoes, cabbage, poblano peppers, onion, green onions, cheddar cheese, and chicken breasts in the crockpot. I hope it turns out good. I wish I would have remembered I had zucchini, too. Hopefully it will save for another day.

I got a smashing deal on whole cut up chickens at the grocery store today, so one is on a sheet pan in the oven with kale chips and roasting cauliflower. Well, three pans, actually. Seasoned with creole seasoning and some extra herbs.
