subtly meat-free entrees?
My family mostly just inhales what I serve, so I'm trying to think of main dishes where I could leave the meat out and no one would notice? Meat is one of our main grocery expenses, and I'm hoping to cut back on that a little. All I can come up with is lasagna and chili.

wow, Erin's covered a lot of good ones. I can only think to add chilli....and maybe soups, depending on how your crew feels about soup.

We eat meatless meals quite often. Here are some more ideas:
black bean soup/chili (I have a recipe that calls for mushrooms, giving a meaty texture) stuffed peppers or cabbage rolls filled with lentils and rice or quinoa potato/kale/cheese casserole vegetable soup of all varieties--butternut squash, tomato, split pea, etc. stir-fried vegetables with tempeh (cultured soy--tastes much better than tofu) over rice I often serve a salad or bread on the side. Even if you don't go completely meatless, you can greatly reduce the amount of meat by serving casseroles and soups. Last night, for instance, we had had chicken soup with corn, potatoes, carrots, onions and garlic. For 6 quarts of soup, I used less than a pound of chicken breast. I often use meat more for flavor or as an ingredient and not as often as a main entree.

The ones I make regularly that are meat-free are:
Chiles rellenos stuffed with cheese, served with rice and red sauce Cheese enchiladas (but bean ones would be wonderful if your family would eat them) Mediterranean pasta - pasta, tomatoes, spinach, feta, olive oil, spices, pine nuts Macaroni and cheese Cheese ravioli Fettuccini alfredo Potato soup Less meat meals: Chicken noodle soup with dumplings Chicken pot pie soup Chicken chili Beef chili Salads

We have just decided this week to incorporate some meat-less meals into our diet. I think ds will be the only one not too happy about it.
One we often have anyway is homemade mac n cheese. I' m going to do veg curry as we eat curry often.
