Re: Menu Ideas
Quick, Relatively Cheap Meal
Check out the supermarket-brand frozen veggie mixtures at your store. The ones that are just veggies, no sauce, generally cost less than $2.50 per 5- or 6-serving bag even in Alaska. Make sure that there is a stir-fry recipe on the back and that you have, or can afford, the ingredients called for before you buy. Don't just stick to "Asian" or "stir-fry" types either; my favorite is called "Santa Fe Blend." I haven't yet found a recipe I didn't like, and they all take about 10 minutes. Start a pot of brown or white rice or warm some tortillas. If making rice, add a tablespoon of oil to the pot for extra flavor and to make the meal more satisfying. 15 minutes before the rice is done, start the stir fry as directed on the package (The extra 5 minutes gives you time to find the one bottle of whatever that always gets lost.) Add whatever sliced meat you have on hand, or cubed tofu, 2 or 3 minutes before the stir fry is done. Or add cooked meat right at the end and stir just to heat. Keep it at no more than 1 part meat or tofu to 3 parts veggies, less if nobody needs the protein today. Serve the meal with glasses of milk and end with fresh fruit to get all of your food groups. If you think that your family won't finish the stir fry, be sure to make lots of rice and have some eggs on hand. You can make fried rice the next day out of the leftovers!

Re: Menu Ideas
With a babe in arms, a Little Explorer, and a Young Thinker, my days are crazy. Stir-fry blends have gone so high in price that we can't afford them anymore. However, ground beef is still affordable if I buy on clearance.

Homemade Sloppy Joe (Can't do this while I'm nursing the baby, unfortunately--too much tomato.)
