I'm so terrible at cooking in the summer. We are normally a family that eats together every night and I enjoy cooking, but in the summer, it seems like there's only three of us at home on any given night (my girls work at a Christian camp some of the summer) so I'm just not motivated .
Anyway, tonight we're going to a church BBQ and I have to make a side dish so I made this Corn, Bacon and Parmesan Pasta. Simple, but really yummy flavors.

I am killing it this week with dinners
Saturday night was tuna cornbread cakes, something DH loves and we hadn't had in ages. He helped me out by frying them while I got the rest of dinner together. Yesterday we had salmon melts, also something we hadn't had in forever (they are so much better with fresh local tomatoes) and maybe the best roasted cauliflower I've ever made. Tonight I'm doing zucchini pizza, another summer fave that we can only have when the tomatoes are good and fresh. That's the theme the rest of the summer now that they're in season. Bruschetta chicken, bruschetta pizza, scalloped tomatoes, tomato pie...

I'm still waiting on our garden tomatoes. But once they start coming in, we eat them every day, too! There's nothing like a garden fresh, vine-ripe tomato. It just screams summer! (Tomato sandwiches, panzanella, caprese salads . . . . )
We're having zucchini/yellow squash noodles for sure, but I'm not sure what we'll put on top. We've got plenty of basil, so maybe pesto. I need to go shopping!

Need to use up beef in our freezer. Tonight is cubed steak sandwiches. dh will grill them. I wonder if that works. Maybe pan frying would be better. . .

I grilled a couple of flank steaks last night and braised swiss chard and zucchini from the garden.
Tonight we had beef and garden veggie stir-fry - yellow squash, peppers, and cabbage. I love garden harvest time!

We had chicken cutlets, zucchini "fries" and pasta. DD made pasta with fresh-picked basil pesto. I had made a couple batches of ciabatta this afternoon (working on my technique) and there was some of that as well.
