Oatcakes with raspberry compote
It's breakfast for supper tonight!
Here is my adaptation on an Eating Well recipe: 2 cups homemade kefir 1 large egg 1 1/2 cups old fashioned rolled oats 1/2 cup quinoa flour 1 tsp baking soda 1/2 tsp cinnamon 1/4 tsp salt Mix kefir and egg. Stir into dry ingedients and allow oats to soak for 15 minutes. The make like pancakes on a griddle. Raspberry compote: 2 cups raspberries, 2 tbsp maple syrup Heat on stovetop until berries break down. Serve over oatcakes

I am coming back to edit the recipe. I ended up doubling that amount of flour to make the batter thicker. They were a huge hit and there is just enough berry compote left to put on my oatmeal tomorrow morning!
