I haven't forgotten about this thread, I just haven't been cooking much. I think I got Listeria from a salad (specifically the cheese packet) that Costco recalled just over a month ago. DH and I both ate it and we got sick within days...but then last week I had the exact same symptoms again. DH also hasn't fully recovered. I made a doctor's appointment for Tuesday, to see if I need to get tested. That is my long explanation about deciding to throw away the Tofu. I've had enough food poisoning to deal with to chance getting sick.
Quiteria, I have been buying ingredients that allow me to complete a meal with what I have on hand. I also have plans to make soup. I love soup and also love having it as leftovers.

I have half a tub of miso left over. I need to make miso soup again this week. NOt sure what else is up next for the freezer or pantry.

I have some froze mushrooms, going to make a mushroom miso soup to finish those off.
I have some frozen ground beef and frozen vegan crumbles so pasta to use those up. Which will also use up some pasta and sauce in the pantry. I always try to have some on hand, but I think I can pare it down a bit. I bought canned soup for quick make your own dinners for winter and there are a bunch left so thats one night this week too.

I don't know why I bought mackerel chunks in tomato sauce during a recent grocery shop. I felt the need to come here to confess to a purchase that might sit in my pantry. Otherwise, I have been good at using leftovers to make new meals, and finding creative ways to use mushrooms (tonight was egg foo yung) that might otherwise have gone bad.
I am just now remembering that I used to be able to buy mushrooms from an open bin and put as many or few as I wanted into a paper bag. Now the only mushrooms I see for sale come portioned in plastic wrapped containers. I usually struggle to use all of them.

I used up all the soup except 1 extra large can of tomato soup - so Ive started an upcoming menu.
So next week I have grilled cheese and tomato soup and I have 2 boxes of falafel mix so Ill make falafel rice bowls which is one of my more collectively (aka everyone gives it 4 out of 4) dishes. So I dont really need to "clean it out", but Im due to make that again.

I'm going into my busy time. And meal plan is a struggle. But I did really well and I don't think I really have anything extra right now anyway. Ill be back in the summer!

I need to get back at this. Meal prep from my stocks and only shopping from a list should help me. I have some freezer and fridge space, and my pantry shelves have a bit of breathing room, but here is room for a lot of improvement.
