I went simple tonight. Threw a couple chicken breasts in the IP with 1 cup of salsa, pressure cooked, shredded, and served on taco shells. Roasted carrots, brussel sprouts, onion, garlic and mushrooms on the side.

Have I ever said how much I LOVE my IP?

Did you add water? Was it super liquidy?

How do you shred your Brussel Sprouts?
Trader Joe's shreds them for me . There are directions for a recipe with balsamic vinegar and bacon on the bag and it's SO yummy!

For the ravioli, I buy chicken/mozzarella ravioli at Costco and the sauce is:

6 T butter
2 T balsamic vinegar
.5 t salt
pinch crushed red pepper flakes
6 T toasted walnuts or pecans
4T Parmesan cheese
Brown butter, remove from heat. Whisk in vinegar, salt and red pepper flakes. Add cooked ravioli. Sprinkle with nuts and parmesan.

It's so yummy!

No water. The breasts emit enough liquid so that you don't need anything additional. It was a bit liquidy but I shredded the chicken and put it back in and it soaked up most of it. We had a bit of liquid leftover but not a ton.

Today is Fishy Friday. We've got co-op all day, then errands to run and I've got a rehearsal tonight, so the timing is tight. I'm thinking heat and eat - salmon burgers (or fish sticks for the littles), oven fries and broccoli. Boring, but I'll make it up this weekend.

I probably need an Instant Pot, right?!

I'm bringing dinner tonight to a friend, so I'm making a family favorite of Lemon Chicken Linguine, roasted broccoli, fresh rolls, and chocolate cake.

This looks yummy! We do pasta night every other weekend and I need some gf/df/sf recipes. This will be easy to adapt. and not boring pasta & red sauce.

Tonight Dude is making dinner. Zatarain's red beans & rice burritos. Dh & I are going out to celebrate our anniversary.

The same authors also wrote "Gluten Free Artisan Bread." I borrowed it from our library.

I made up a dish that everyone loved. I roasted 2 spaghetti squash. Made a roux with butter and flour. Added milk, salt, garlic, nutmeg, red pepper flakes, and grated mozzarella (because I had a lot leftover from making pizza). Added leftover diced chicken. It would've been even better with spicy sausage but chicken was what I had. Everyone loved it.

Tonight we're having clam chowder and homemade bread.
