You're very welcome! I've found that Earth Balance substitutes perfectly. Have you seen the non-dairy, non-hydrogenated whipped topping at Whole Foods? That'd be great for a DF pie!
what DOES it have? soy, gluten? I love cool whip and I would be so happy to find a safe sub.

I have not seen that kind of whipped topping -- I'll be stopping by my HFS this afternoon. Thanks for that tip!!!

Abbi, I didn't look at the label that closely, just saw it. Maybe if I google it I'll get a hit . . .

http://www.postpunkkitchen.com/forum...opic.php?id=24 This thread has some ideas. I did find a link that had ingredients for a non-dairy, non-hydrgenated topping but it had casein in it!!! So, I'm wondering if that product I saw at whole foods has casein, too.

The above link mentioned something about Rod's Whipped Topping. It's a vegan website so it would be dairy-free.

edited becuase I posted a link about vaccine laws, not DF whipped topping

Rich Whip. Look for it in kosher grocery stores. It comes frozen in little individual serving milk carton looking cartons. Blue and red packaging, white lettering I believe. Strawberry on the front.

It's no health food, but it IS vegan(by accident by way of being parve) and it IS whipping cream to a tee. You beat it for several minutes and it is fluffy and airy and it is...whipped cream! It's amazing and will hold its shape in recipes (banana creme pies, mousses, strawberry shortcake) and will retain it's shape/volume in the refrigerator once whipped for over a week. NUMMMMMMMMYYYYYYY. It makes Hip Whip taste like a hairy asparagus crack by comparison.

Smackin Good also makes a vegan whipped cream in a tub (just like Cool Whip) and a vegan nitrous can style whipped cream.

The most like fresh whipped cream though is one very much like Rich Whip that is packaged in a similar (but larger) carton with a yellow front and orange lettering. The brand is Geffen. It's less sweet than the Rich Whip. Both are very good, I just like this one slightly better since it isn't as sweet. You can always add additional sweetener before whipping

My husband is going to dance for joy when I tell him that there are vegan alternatives to whipped cream. Too late for tomorrow's pie, but you can bet he'll have me making more pies next week, after we can get some.

By the way, Earth's Balance also makes a shortening sub. Wild Oats sells it where we are, in the refrigerated butter section, but not side by side with the Earth's Balance butter. It's a box of four 1/2 cup sticks, and the packaging and branding are different from Earth's Balance butter, so I didn't notice it for ages. I also saw vegetable shortening in the dry baking aisle, which I assume is nonhydrogenated, as Wild Oats policy precludes any hydrogenated products.

I love the Libby's recipe, and especially since I can find evaporated goat's milk, that's the recipe I'm using tomorrow. I tried finding a frozen pie crust, but they all had dairy in them, so tomorrow is my first attempt at a crust from scratch, too.

Thanks Lisa, I'll have to see if I can find the Rich Whip locally, the ingredients look safe!

spectrum also has a natural veg shortening.

I've found that the best improvement to the pumpkin pie recipe is to skip the pumpkin pie spice and use the sub combo of ginger, nutmeg, cloves & cinnamon but also to double the required quantity of spice. It gives a much heartier filling.

Also while love the flavor of butter crusts a la martha I find them too short for my tastes and prefer the combo of shortening and butter. A little cider vinegar and powdered sugar makes a wonderful flavored and very tender flaky crust.
