What do you do with zucchini?
We are staring to get them from our garden and once you get 1,you get 100 it seems we usually sauté them or make zucchini bread. I'm wanting some different ideas. So,how do you use them?

Re: What do you do with zucchini?
zucchini noodles. Seriously. One of our most absolutely delicious favourite dish around here.
This is the recipe I use: http://www.everydaymaven.com/2013/zu...-tomato-sauce/ I just cut the zucchini by hand with a sharp knife, so my strips are thicker than pictured, but just the way we love them.

Raw in salads or with dips. In soups. In pasta sauces. Muffins.

Re: What do you do with zucchini?
I second grilling it. Sprinkle salt and olive oil after. So good!
We also like it as a raw crunchy snack dipped in homemade ranch.

Re: What do you do with zucchini?
My mom always made 'Summer Casserole' and it's simple and delicious:
The base: 2 yellow squash diced 2 zucchini diced 1# of cooked, crumbled sausage (faux or real) 3 eggs 1 small/medium finely minced sweet onion. Garlic powder or 3 garlic cloves minced Salt Pepper Combine all items in a bowl except eggs. Beat eggs and toss in mixing thoroughly. Pour all ingredients in a covered casserole dish. Top with fave shredded cheese/cheese mixture. 350° for 30 minutes or until egg mixture has set and veggies are tender! Edit: I'd drizzle CO or EVO or your preferred oil in this if using faux meat or going sans meat while mixing everything. The fat from the sausage prolly helps cook the veggies/egg into a casserole-ish finish. Last edited by Proverbs3Rubies; 07-15-2014 at 05:47 PM. |

I just have to say, THANK YOU for this thread. Since we love zucchini AND grow it, I'm thrilled to add so many fantabulous ideas on how to prepare it to my repetoire.

Re: What do you do with zucchini?
Dry into chips. We have a dehydrator but you can use the oven. Here's one recipe. I've never tried it but it tells you how to do it int he oven. http://www.tablefortwoblog.com/zucchini-chips/
I've sprinkled them with salt or seasoned salt before dehydrating. I've also done them plain. I'm sure there are plenty of other options for herbs/seasoning online. |

Re: What do you do with zucchini?
Oh, chips! I'll have to try that. That's one of the few good ideas for preserving I've ever heard.
I'll stuff some in a near-empty jar of pickles. They aren't as good as cucumber pickles, but it's an easy snack.

Re: What do you do with zucchini?
We do noodles, cut up in stir-fry, just steamed with a bit of sea salt (not too long, though; they fall apart!), or just juiced!
