Then I taught a Cooking Around the World class at our homeschool co-op a couple of years ago. As I was doing my research, I found a couple of ethnic cookbooks that used dried beans in falafel. I tried it out and the difference was astounding. It was one of those "Eureka!" moments for me.
That's useful - thank you!

We used GF bread, but I can't do eggs.

It's not at all authentic to use egg or bread But I won't deep fry them, simply because that's way too much work and wasted oil So I needed another option.

They worked out great!!

I must admit I didn't get them I put them.in the oven in a very generously oiled sheet pan and brushed oil on the top.

I though they were wonderful. I even got some.almond milk yogart and made taziki sauce.

The children however did not enjoy them. Early bird wouldn't even try it.

Yay! Glad it worked out.

Sorry your kidlets didn't appreciate them.

My oldest used to turn her nose up at falafel, but asked for them for her birthday dinner this year. So there's hope! (Of course, she insisted they were the authentic, fried variety. )
