I have chicken in the crock pot with 1/2 can coconut milk 1/2 c honey 1/2 c mustard 2 t curry powder 1 t salt I've broken it up now that it's almost ready to soak up more deliciousness, and I'll serve it over rice with sautéed green beans.

I didn't use Dijon last night, but that would be extra flavorful.
It was tasty. What looks like too much liquid once the chicken starts to cook turns out to be barely enough.

Hmmm I am not a recipe girl. I think it was loosely based on a recipe online but I can't even remember that...
I just chopped up some boneless chicken, added to IP, added chopped onion and garlic. Then in a bowl mixed together chicken broth (probably a cup or two -- I usually add extra because my kids like extra gravy for their rice), balsamic vinegar (about 1/3 c I think....), a couple TB of honey then any preferred seasoning, mix and dump over chicken. Pressure cook. Afterwards I put it on sautee and add some corn starch to thicken the gravy.

GF pizzas with pepperoni and fresh basil on frozen crusts from Trader Joe's...not great as I remember, but after enough time passes I tend to try these things again. With tossed salad and an episode of The Great British Baking Show. Dh is into it now and the big boys aren't home this evening so it's dinner on the couch.

We've got yellow squash going like gangbusters in the garden and some cauliflower so I roasted those and some oven fries to go with the fish burgers from Costco.
