Easy vegan slow cooker recipes for post-partum...
I'm getting a slow cooker for my homebirth and figured I'd start collecting recipes now for post-partum. I've never used a slow cooker and would love some easy recipes I could toss in in the morning and have dinner ready while I'm busy with baby all day!
So please share...

my favorite is chickpea curry-- i make this all the time and eat it for lunch throughout the week. this recipe is modified from bust-a-meal. check them out online-- they have a few other vegan or vegan-adjustable crockpot recipes.
Vegetable And Chickpea Curry Ingredients 1 tablespoon olive oil 1 1/2 cups chopped onion 1 cup (1/4-inch-thick) slices carrot 1-3 tablespoons curry powder 1 teaspoon brown sugar (or squirt of agave or honey) 1 teaspoon grated peeled fresh ginger 2-6 garlic cloves, minced 3 cups cooked chickpeas (garbanzo beans) 1 1/2 cups cubed peeled baking potato 1 cup diced green bell pepper 1 cup (1-inch) cut green beans 1/2 teaspoon salt 1/4 teaspoon black pepper 1/8 teaspoon ground red pepper 1 (14.5-ounce) can diced tomatoes, drained 1 (14-ounce) can vegetable broth (i only use about 4 ounces or recipe is too liquidy) 3 cups fresh baby spinach 1/2-1 cup coconut milk Preparation Heat oil in a large nonstick skillet over medium heat. Add onion and carrot; cover and cook 5 minutes or until tender. Add curry powder, sugar, ginger, garlic; cook 1 minute, stirring constantly. Place onion mixture in a 5-quart electric slow cooker. Stir in chickpeas and next 8 ingredients (through broth). Cover and cook on HIGH 6 hours or until vegetables are tender. Add spinach and coconut milk; stir until spinach wilts.

There is a good white bean chili recipe floating around GCM, as well as
a coconut lamb chickpea curry (made without lamb ). I also like Red Lentil Soup. Broth powder: http://www.gentlechristianmothers.co...ritional+yeast White Bean Chili Makes: 6 servings 1 medium onion chopped 1 vegetarian “bouillon” cubes (low or no sodium added) (I use a few tablespoons of vegan broth powder) 2 cups (or 1 can) cooked black-eyed peas 4 cups (or 2 cans) cooked great northern beans 2 cups (or 1 can) cooked navy beans 1 can hominy (or white kidney beans for a corn free recipe) 2 1/2 cups of water juice of one lime handful of fresh chopped cilantro few dribbles of hot sauce (won’t taste, but adds flavor) Alternately, I use 4 cups dried beans, soaked overnight, and 5.5 cups water. I don't use canned beans. If using canned beans, drain and rinse. Add everything to a crockpot. One of my favorites:
Potato Soup 8 potatoes (peeled or not) chopped 1 onion, chopped 2 celery ribs chopped 2 carrots, peeled and chopped small 1 can veggie stock 2 T dried parsley 1 1/2 tsp salt 1/4 tsp pepper 1 cup milk (or milk sub or even water works here) 1/2 cup flour Garnish with green onion Put all ingredients down to and including the pepper into the crockpot. Add water to within 1" of the top of the crockpot (this recipe is for a 5 qt, so adjust accordingly). Cook on high for 8 hours. 1 hour before serving, put milk (sub) into a small conatiner with a lid, add flour and shake till well mixed. Add to the soup. |

Crockpot Coconut "Lamb" Curry
(many times I leave out the lamb and make it veggie.) Ingredients: 2 cups dried chickpeas, soaked overnight 2 tsp salt 1/2 tsp black pepper 2 tbs curry powder 2 sweet potatoes, peeled and diced 1/2 Cauliflower, diced 1 medium onion, chopped 1 can coconut milk 1 cup water 2 tsp. hot sauce, optional 1 14 oz. can diced tomatoes with the juice 1 cup peas, frozen Soak the beans overnight. Drain & return to crock. Add everything else except peas. About 1/2 an hour before serving, stir in frozen peas. It takes about 8 hours to cook on low. Serve over cooked rice.

We use coconut milk in our potato soup. It's really good. One can of coconut milk and broth or water to cover all the ingredients.
Lasagna works really well, too. I do it with plain uncooked noodles and mashed tofu ricotta. If you cook it too long the ricotta gets chewy. My crockpot runs really hot, so I have to be careful. Enchilada casserole. Curry is wonderful in the crockpot. If you can find the jarred sauces, they make a quick crockpot meal. Just add your favorite beans, lentils, greens, potatoes, and the sauce and some water. Let cook all day and serve over rice or quinoa.

How do you make lasagna and enchilada casserole in the crockpot? Can you really just layer and cook?

If you can get a copy of Fresh from the Vegetarian Slow Cooker, everything is vegan or has the option (like 1/2 c. milk of choice...) Your library might have it. It is an awesome cookbook.

I layer the casseroles just like I do for the oven. It took me a few times to figure out how long to cook it. But, it makes things a lot easier for me. I have a small crockpot and a large crockpot. Both of those freeze well, too. So, you could freeze leftovers in meal portions.
If you check out the everyday food website for pumpkin enchiladas...that works well. I just use whole black beans instead of chicken.

Also, I got a taco soup recipe from somewhere on these forums, and I make that in the crockpot all the time. It only takes 4 hours, though, so I make it after lunch and it's ready for dinner. I will look for it and link back to it once I find it. |
