Re: July Dinners
We made pizza for 10 people tonight it was good. I am very happy with this GF crust.
Then only issue is that i was washing and moving around in a kitchen that had cheese out and now I am reacting. I think I have to not touch it at all, and that is hard. Sent from my XT1254 using Tapatalk

July Dinners
We made lemon dill pollock with Asian spices steak, kale and asparagus. Kind of a strange combo, but I really didn't want to mess up the fish.

Re: July Dinners
This was a different recipe, only my second time using it, I like it a lot.
I used the master recipe from the gluten free no need to kneed book. And just pulled out 6oz balls and 'rolled' ie mashed them out in to rounds. I can pull the recipe latter, I will see if I can find a link. Re: July Dinners
Tonight was a mash up. I originally planned to make egg roll in a bowl, so I started rice in the rice cooker. THEN I went out to the garden. Wrong order!
I found 3 zucchini and some yellow squash, so I marinated one zucchini with onion in lemon juice, salt, pepper, and garlic powder for a side. We had some baby greens and yellow beans begging to be picked, so I obliged them. I still had the ground beef out so that got cooked and seasoned for a salad topping along with pepitas and cheese. I made a big salad, the kids ate everything separately.

Re: July Dinners
I mixed fresh basil, arugula, and red leaf lettuce (all from farmer's market) today for a salad base. So good!

Re: July Dinners
I had planned to make the salmon dish that Laurlor posted a few weeks ago, but I never did buy the salmon. So I made a lime and honey marinade for chicken that was okay. The coconut rice though, wow! I'm definitely making that again. It was delicious and easy.

Re: July Dinners
It's at that link...I'll edit to make that clear. You use coconut water and coconut milk instead of water, plus salt. It has a sweet, creamy taste. I added a little chopped basil on top of mine.
