We had egg roll in a bowl last night.

Thursday we had chicken and veggie stir fry over rice, last night was taco salads, and tonight will be zuppa Toscana.

They are roasted. I had never tried roasting them before the recipe called for it, but it is a game changer! Wash, cut the ends off, wrap in foil, place in a pan, and bake at 425 for around 45-50 minutes. For really large beets, I have been cutting them in half, and wrapping them separately, otherwise that isn't enough time. When they are done, the beet skin will come right off without alot of effort. WAY easier than trying to peel them before cooking!

I made Moroccan spiced lentils tonight and cauliflower rice. The lentils were so good!

Chicken salad wraps for ds and I; Tuna Salad wraps for dd and dh.
I cooked the chicken and chopped the celery yesterday so should be easy work today. Which is good bc I come home, drive dd to soccer. Make dinner. Pick up dd from soccer. Then ds leaves for soccer (carpools). So we will all eat separately. DD will have soccer mostly 4-6 (right after school since its HS team) and DS will be 7-830 at the club. And they made elementary earlier start and middle and high school later start so now our every day family breakfasts are gone as Ill leave at 7am and ds and dd don't need to be at school until 8:45 so I wont even see them anymore in the am.

I'm making random veggie soup in my Instant Pot right now. I have extra veggies from my organic veggie basket I get from the local health food store that need to be used up, so I threw them into the Instant Pot with some chicken broth and spices, and I am going to puree it and add coconut milk when it's done cooking. Hopefully it turns out good! The kids are saying it smells good, so hopefully that means they will actually eat it
