Yesterday I made a double batch of Jeri's oatmeal raisin chocolate chip cookies. I still have some of the dough in the fridge, we ate a bunch and I froze some dough balls. My ds and I loved loved loved them! My dh doesn't like his cookies too chunky, so the amount of raisins and chocolate chips (I used mini ones) were a bit too much for him, oh don't get me wrong, he still ate his fair share. I think I added too much flour, I always add more than a recipe calls for bc I always find my stuff way too sticky, but they were pretty dense, they didn't spread out at all. I asked my dh to check on them and he asked how to tell if they were done and I asked how they looked and he said "exactly like when you put them in." They still looked like dough but they were done and very yummy. I will definitely make them again, I'll just use less choc chips and raisins (or maybe I won't-more for me ).

This is what I make when I am craving ice cream.
1 pint of whipping cream 3 Tbsp. organic cocoa powder 3 Tbsp. pure maple syrup Beat until very thick. It tastes like chocolate mousse. Jodi, I will have to try that cake! Do you soak the flour first or do you skip that step for cakes? |

When I made the cake/cupcakes today, I did let it all sit for awhile in the bowl before I put it in the pans. I tend to do that whenever possible.
I need to stop eating the cupcakes! I'm on my third for today, but they are healthy right?

i made maple icecream w/milk, cream,eggs and maple syrup ooolala so good such a rich maple flavor you have to reduce the syrup from 1c to 1/4 cup yummy
