I need quick help with the menu for a party
I didn't know how to word that intro
My DD is having a family get together for her birthday tonight. I had planned salad, with marinated chicken. Then I ran into issues with my sister's family's allergies, so I decided to go with tacos. This morning is turns out DD really wants salad So... the biggest issue is how to actually prepare/marinate chicken. My sister's family can't have soy, dairy, nuts, gluten, eggs, or garlic. I think I can fudge the garlic, cause that kid won't eat the chicken. I don't have a lot of time to marinade now, because the party is tonight. Do I throw together a marinade of ... like... olive oil, lemon juice, and... maybe something else, and go with that? Should I just cook the chicken in something? I am running on fumes and my brain has stopped, and DH is a better cook than I am, but I'm on food duty for a while cause of his medical stuff. I feel like this is a dumb question, but I am all kinds of confused about the best thing to do

Can they have shallots? Those are nice with lemon and oil. You can serve with baby arugula and whatever else with a lemony dressing.
Sometimes I bake chicken breasts with salt and olive oil on top of a few fresh rosemary sprigs. Then I serve sprig side up. It turns out pretty and tasty. I'd probably flatten them first to get faster cook time and more flavor in each bite. |

How about a cilanto/lime/chili or chipotle type marinade so that people can have chicken tacos or taco salad?
And I agree with MegMarch. Definitely pound the chicken before marinating.
