I've been working on an Orange Popover recipe that just might fit your parameters this week. It's not as high and airy as a savory popover - more like an oven pancake texture - but my kids actually eat it!
4 eggs zest and juice of 1 orange 1 c coconut milk 2T coconut oil, melted pinch salt 2T sugar (or juice concentrate!) 1 c flour (I've had best results w/ half whole wheat pastry flour and half AP) Mix everything in a blender. Pour into greased popover molds. Bake at 400 F for 25 - 30 minutes I suppose you could use butter and dairy milk if you choose. After all, that's what's in a real popover! I haven't had a chance to try it yet, though. The mini muffin tins from Ikea are perfect for these because they are tall and narrow, as opposed to standard muffin/cupcake shape and halfway between a standard muffin cup and a mini in volume. The recipe makes one pan, so 12 mini popovers. If you only have a standard popover pan, you'll get 6. Tall oven-safe coffee cups should work, too. And I was wondering, Marrae, if you liked oven pancakes (known here as a Dutch Baby, or German pancake)? This one is requested quite often at my house! It's super easy. I have best results in my cast-iron skillet - I melt the butter in it while the oven is heating up, and then just dump the batter on top of the melted butter. (I don't bother to pour it into the blender and mix it up first.)
