a hodge podge of leftovers and sandwiches for dinner last night. Today we go to my mother in law's for easter dinner and I know her well enough that she'll cook for 10 times the people that will be there and we'll come home with leftovers for several days. So I didn't want to have any leftovers to start the day!

Dill potato salad, carrot sticks, blueberries and grilled hot dogs. Keeping it comfortable food and easy on the deck.
Tonight is different. Ham, pineapple casserole, lightly candies carrots, garlicky green beans, mashed potatoes and strawberry fluff for dessert. |

And.... I was right about the amount of food my mother in law would prepare for easter lunch. Keep in mind there were a total of 8 of us there. 2 children who are gluten free. All of us trying to eat moderately/healthy.
She cooked FOUR pans of lasagne. Had FIVE loaves of bread with all the fixings for sandwiches. TWO pans of scalloped potatoes. Veggies. And FOUR pies for dessert. She sure does love to cook en masse! She tried to send us home with so much more but man, we can't even finish those leftovers in time! BUT we did take the gf stuff -- 2 pans of lasagne, 2 pies, 2 loaves of bread. SO lasagne for dinner tonight it is!

Tonight was th birthday we had german. Sausage and sauerkraut with spatzle cucumber salad. by Yellow cake with dairy free whipped chocolate frosting for dessert.
The cake was a bit disappointing. Used a gf mix which I've done a billion times before I've always used oil not butter because df I've never adjusted anything more. This time I bothered to read and it good me to add 1/3 cup gf flour and then the oil and eggs.. I did but the cake came out dense and kind of dry. It tasted good just dry... Planning a lasagna for tomorrow. Dh has a big and Margaret has ballet so I can have it fixed in the am and heated quickly in the evening. Serving with salad

Last night we had Italian beef, mashed potatoes, gravy, broccoli and cauliflower mix and Caesar salad.
Tonight I'm planning Mediterranean pasta and Greek salad. Or maybe the baked salmon with tzatziki, rice and marinated Greek salad. We'll see what happens.

homemade pizza
steak or shrimp w/ brussel sprouts spaghetti rice and beans with chicken sausage on the side for meat eaters ravioli (I know that's 2 pasta dishes this week, but it's a busy week and going to keep them at each end of the week, ie spaghetti was last night) for veggies I will do carrots, spinach, salad, broccoli - not sure what with each meal, not assigned.
