Re: kombucha 101 thread!
I would. My 2nd ferment usually is 48 hours on the counter and then I drink it cold from the fridge the next day.

Re: kombucha 101 thread!
Oh boy it's good!!!
I'm calling my mango KT "Amy's Mango Explosion." Because that's basically what happened all over my counter when I opened the bottle. Recently I've discovered my second ferment bottles are Bormioli Rocco Giara bottles and I'm pretty psyched I got them for $1.99 each without knowing I was getting a decent deal. |

Re: kombucha 101 thread!
Hey do you guys think it's possible if I let the second ferment go too long that it could get kind of...alcoholic?

Re: kombucha 101 thread!
Hmmm, maybe that's why mine is so good....

Re: kombucha 101 thread!
Yeah, when I had some yesterday it didn't have the kick it seemed to have this morning. It was right before lunch and I hadn't had anything since breakfast. My MIL is calling it "tea shine."
Ds1 tried it but prefers his GT Dave's multigreen. Ds2 is a total no go. Ds3 won't touch it, and he was coming back for more before the second ferment. So I guess this batch is for me and the next one maybe I'll leave plain or only ferment with fruit for a day or two instead of five. |

Re: kombucha 101 thread!
My mom's friend cuts her KT in half with sparkling water and adds stevia. I don't get it. Does anyone else do this ?

Re: kombucha 101 thread!
When she drinks it?
I can understand cutting it in half. Sometimes it's just "too much" to start off with. I feel like such a poser saying that - but I've not been drinking it lately and been giving it all to the kids every morning to help boost their systems. I have been thinking of brewing a bag of hot tea and cutting that with the bucha. Adding stevia or other sweetener - imho really defeats the purpose.... but that's just my opinion. |

Re: kombucha 101 thread!
That sounds like the commercial bottle I had gotten. Cut with water, carbonation added, and cane sugar listed once with the kombucha tea and again as an additional ingredient.

Re: kombucha 101 thread!
I understand cutting it with water- that makes sense. I just never thought of it before.
Adding sweetener is just confusing to me. |

Re: kombucha 101 thread!
Had to dump my entire jar of KT. And the scoby.
I secure the towel to the top of my jar with a rubber band and then set the glass lid on top of that. The KT can still breathe since the glass lid isn't making any seal. I had some really good carbonation (yay!!!) which made the scoby rise right up against my towel. Which made the towel wet. Which attracted the fruit flies. I pulled the towel off and found little creepy crawly baby larvae all over my scoby. So I'll be starting over from square one. *sigh* If I have a bottle of my KT brew with a few slices of fresh ginger in it, can I use that as a starter?? Or would it be best to get a bottle of raw, unflavored GT's KT??
