This one looks promising as we have plenty of butternut squash in the garden.
Neato! I noticed that this recipe can be assembled, and then defrosted and cooked in the slow cooker when needed. I've never thought of making "freezer meals" for the crockpot.

CrockPot Aztec Chicken (from another forum)

6 boneless, skinless chicken breast halves
2 c. frozen corn
2 cans black beans
8 oz. salsa
4 oz. cream cheese

Instructions:
Combine black beans, corn, and half the salsa in the crockpot.
And chicken, spread remaining salsa on top

Cook approx. 3-4 hours on high, low 5-6 hours; more if using frozen chicken

Add 4oz. package of cream cheese, stirring in well, in the last hour.

Serve with rice and/or corn tortillas. You can top with cheese and sour cream.

If you omit all the dairy, it's still good.

Desiree, I am quite sure I had Aztec Chicken at someone's house a couple of months ago. She cubed the chicken, and might have omitted the beans. It was delicious served on rice with a salad.

Bumping in case anyone has any recipes to add. I made expatmom's curried chicken and it was delicious. Tonight we will be trying Aztec Chicken.

I really like this Mushroom Sauced Pork Chops one. I use homemade cream of mushroom soup for gf and just throw it in there. The children scarf it down as well. Which is ALWAYS a plus.

I did these up this week http://mamaandbabylove.blogspot.com/2011/04/freezer-cooking-with-slow-cooker.html
They are in the freezer now, but I haven't cooked them up yet. It seems perfect -- chop & assemble recipe in advance, freeze, dump into crock pot on a busy day. I'll update with a review after we eat the first one.

I'm thinking we're going to rely on the crockpot more once I start school.
