Cooks, will this turn out edible?
Okay,I tried something new it's already in the oven. Will it turn out and if not,how to save it?
I parboiled brown rice in beef stock. While it was still boiling,I poured it into a round,glass dish with a lid. Put the following items on top: raw chicken tenderloins, diced onion,chopped sweet peppers and bay leaf,thyme,garlic. 375 currently Think it will come out dinner? |

It should be fine! Tho not sure if chicken and rice will be done at the same time, I've seen casseroles cooked this same way, with uncooked rice, raw meat and enough liquid to cook rice

I think so! How long are you cooking the chicken for? Tenderloins go really fast and I'd be checking them at about 20. I normally put mine in for about 15, but they go a bit slower when they're in liquid (at least IME).

45 minutes later and I have chicken temp at 140 and mostly cooked rice. I turned the oven up to 425 and will check it in ten minutes.
I need to thicken the "sauce" somehow. But it's just veggies and beef stock. Any ideas? Husband is on a no sugar,no yeast ,no most things he you use to cook diet |

Can you use cornstarch? I'd take about a tablespoon of cornstarch and mix it with some beef broth and add it?

If there were many drippings from the chicken it will thicken as it cools.

In the future, arrowroot or tapioca starch may match your diet better and thicken the sauce nicely.

Cornstarch is one of the fifty bazillion no nos in the process of getting rid of candida overgrowth. Whew. Anyway It came out dinner although not very exciting. But at least it was all cooked! |
