Easter was tacos (yes, very easter-y of us, huh? )
Tonight was chicken garlic and herb sausage for my omnivores, brown rice, roasted pinegranate balsamic asparagus, roasted peppers, onions, zucchini and yellow squash with south african smoke seasoning (from trader joe's), garlic and butter

last night was creamy pesto chicken and broccoli pasta (DH hated it, DS1 and I thought it was great)
tonight is peanut sauce chicken and rice

We had leftovers last night, and I still have an unreasonable amount of ham left, even after stashing half of it in the freezer for some other time. I don't even particularly like ham. It went nicely with eggs for lunch today though.

This week has been crazy. We had Little Caesar's for Monday dinner, we took friends out to Abuelos for Tuesday dinner, last night we had our favorite meal of bacon risotto, lemon pepper chicken, and asparagus from the garden. Then tonight I'm hoping for tacos but I have to get to the grocery store.

We've been eating leftovers all week. All four of us are sick and I'm very thankful I had them! Today we'll eat the last of the roast with bleu cheese mashed potatoes and a veggie. Green beans most likely.

Friday we had fettuccine with dried mushrooms and parmesan cheese and an orange lettuce salad.
Saturday we had macaroni and cheese. Sunday we had belated Easter dinner - ham, cheesy potatoes, greens beans, crescent rolls, spinach salad with lemon vinaigrette, strawberries with cheesecake cream http://www.bhg.com/recipe/strawberry...esecake-cream/ (we didn't use rhubarb just added extra strawberries). Monday we had leftovers. Tonight I'm thinking about making beef and potato soup in a tomato broth topped with parmesan cheese. And tomorrow night I'm planning cheese ravioli with marinara and topped with blue cheese crumbles and creamed spinach on the side.
