DH surprised me by making fajitas for dinner last night. This is a big step for him as he greatly dislikes veggies but recently discovered he likes the taste they leave behind when sautéed. He went to to store and even bought veggies.
He still didn't eat any of the veggies, but he did buy AND cooked with them.

For all but me it's spaghetti and meatballs. I had leftover roast beef. (am wheat, dairy, and a bunch of other things free for ds)

Also adding that balsamic chicken with roasted veggies recipe to my bookmarks to do one day. Looks super good.
I made hearty beef and mushroom soup tonight for the first time from this recipe: http://meatified.com/beef-and-mushroom-soup/ It was AH-mazing. SO super delicious. I used my homemade beef broth. Definitely tops my list of all time favourite soups/stews.

Really yummy chicken burgers! We had them Tuesday and everyone likes them so much we had round two today... Pounded and marinated the chicken in herbs and grilled, topped with pickled onions, pesto/Greek yogurt spread and all the usual fixings

blueberry pancakes. dh is gone for the evening so it is a kids meal night and hey it will feel a bit more like cooking since you know i have to measure the flour and buttermilk and crack some eggs and stuff

tonight we had meatloaf for the kids and spinach/feta stuffed chicken sausages for dh and I, along with roasted broccoli, and sauteed kale/spinach/onion/garlic.
