I hope Connie (cmljll) doesn't mind me tooting her horn , but she's got some tasty and simple recipes on her blog. I also love following what she's having for dinner in the what's for dinner threads because she seems to have a knack for taking some simple ingredients and putting them together in unique ways.

We always have ingredients for cheesy tuna pasta bake in our cupboard: one large tin tuna, one pack wholemeal penne, whatever vegetables are in the freezer/bottom of the fridge (broccoli and corn are DD's favourites) and enough milk, flour and cheese for a bechamel sauce.
For d/f, what about quick baked beans? Sauté some onion, bacon, garlic, tinned tomatoes and add a can or two of beans? I can have that on the table in under 10 minutes.

breakfast for dinner is also quick - cheese and or veggie and or meat omelets with toasted bagels.also loaded potatoes with toppins of your choice like steamed broccoli and shredded cheese

Chickpea cauliflower curry!
Bag of frozen cauliflower cook add a can of chickpeas a bit of coconut milk (we are df and this is our normal milk sub) add a couple table spoons of curry paist cook for 10 min thow some frozen peas at it so that it doesn't burn little mouths and serve over rice (I cook rice is obscene amounts, like 8-10 cups at a time, and freeze it )

My cheat meal still requires some fore thought but it is so easy. I cut up a few cloves of garlic and stuff it inside a whole chicken, sprinkle a little oil on top with a dash of rosemary and salt: roast at 400 for 1.5-2hours. The actual prep time takes 5minutes. I serve with roasted asparagus (easy to lay them out on a cookie sheet and drizzle oil on and roast for a few minutes).
another cheat meal is cooked ground beef, frozen cubed sweet potatoes, a chopped onion, a few chopped white potatoes stir fried until the potatoes are soft to poke with a fork, and then I mix in some spicy tomatoes sauce and some chilli powder and salt. I call it sweet chilli hash.

My mom always buys the Tuna Helper Tettrazini (from Hamburger Helper) and a can of cooked chicken (found next to the cans of tuna). Super quick and easy, will keep in the pantry forever.
