Pot roast with cabbage and mashed potatoes tonight.

It will be beef casserole in the Crockpot tonight - the dc have classes/clubs at various times this evening, so it’s easier to have something that keeps hot as we won’t all be eating at once.
I’ve got into the habit of using a packet to make up the sauce/gravy when I’m using the crockpot, as otherwise it’s really watery and doesn’t seem to have much flavour whatever I do. I’d love some tips to thicken the sauce and increase the flavour though, if anyone has any! |

I was in bed sick yesterday, so I did not make any dinner. DH got Wendy's for the kids. They were so excited, LOL.
I am not sure if I am cooking tonight. I feel kind of weak still, even though my symptoms are gone. I was supposed to make something we call "Chicken Palpatine" with basmati rice and peas.

Tonight is quiche. Spinach and sausage for the boys. Mushroom and spinach for the girls. I think I may be out of sour cream but if so Ill just make it without even though when I make it WITH everyone is this is the best one yet.
Tomorrow is order in Chinese for the Chinese New year.

I would love a quiche! I have to put on on the menu for next month.
I was still sick in bed last night, so I did not cook, again. I think the family had Trader Joe's Mandarin Orange chicken. DH brought me a TJ's Paneer Tikka Masala. I am feeling better this morning and no fever, so I am going to try to cook tonight. Homemade Mac and Cheese, and sheet pan smoked sausage and veggies were on the menu.
