Simple meal plan tonight. It's hot here and I have the a/c running so I hate to turn on the oven! But roasted veggies are so delicious! So I borrowed my mil's toaster oven, put in on the back deck and bam -- delicious roasted broccoli with no added heat. I don't know why it took so long for me to figure that out.

Then I grilled some chicken breast, topped with honey mustard and basil tomato feta cheese. A filling side of pasta with alfredo sauce for the kids.

I used beef instead of lamb. One of my coworkers who is from Britain said he hadn’t seen it made with beef until he came here lol. Was he just pulling my leg?

Thank you! Lamb is terrifically expensive here, unless you know someone or raise your own. So we have cottage pie.

I made a great impromptu meal. I took the Aidell's chicken pineapple bacon sausage from Costco, sliced it, and browned the slices in olive oil. Cooked some pasta. Drained the pasta. Melted butter in the pasta pot, added parmesan cheese, salt, and garlic. Put the pasta back in with the sausage and a whole clamshell pacakage of baby spinach. Stirred until everything was hot and the spinach wilted. Everyone loved it.

Also chicken curry with Trader Joe's curry sauce, napa cabbage, and assorted veggies from the fridge.

Other than that we're just grilling chicken breasts all the time. Summer is busy.
