My kids didn't like what I had planned for dinner, so Prima and Secunda made tacos.
I just want to bake. Forget this dinner stuff!

Monday is the day that dh and I spend dinner fasting and praying about the lack of a job and feeling stuck/ traped here. I made bread ( a rare treat) and plan on giving children sandwiches of some sort.

We just had jacket potatoes (or sweet potatoes for those who prefer them) with salad and cheese. Today will be honey and mustard chicken, with new potatoes and green vegetables.

Last night I made this Avocado Chicken Salad. Some of us ate it over lettuce and the rest put it in pita pockets. Super yummy!
I have a bunch of peaches to use up so tonight I'm making Peach Salad {with Grilled Basil Chicken and White Balsamic-Honey Vinaigrette}.

I have a flank steak, chicken breasts, and chicken legs in the fridge.
I think I will roast the chicken legs tonight along with some broccoli. Tomorrow it heats up again and we're looking at 90's for a few days. I'm not turning on my oven! Flank steak will get grilled and served over greens for a salad. Chicken breast is going in the crock pot for white chili.

It's winter here in the southern hemisphere so I am really enjoying warm stews, slow cooked meals and soups.
Tonight will be slow cooked beef with veggies and rice

Oh, are y'all still doing the whole dinner every night for your family? That's nice.
We were on vacation all next week and then I have a lot of work hours this week, so haven't gotten back to it yet. So this week is all simple - sandwiches, pasta, quesadillas. Ill menu plan this weekend for next week.
