Last night was spiral ham, green beans and ( instant) mashed potatoes. (Dh likes to get a ham when they are on sale for the holidays and freeze leftovers. Then he will fry a slice with eggs sometimes instead of bacon)
Tonight we are going to a family member's house. I think they are having burgers and hot dogs.

Yesterday was Mexican - ground beef, rice, enchilada sauce, and seasonings with a little cheese.
Don't know about today yet. Maybe mustard tarragon chicken and rice

Some sort of soup. I don't have much in the house beyond chicken bones, carrots, celery, onions, and potatoes. So soup it is! (and then shopping tonight after DH is home!)

We have a ton of leftovers, but it appears the kids are having popcorn and I'm thinking of making a little bit of risotto. We have declared today pajama day so we're just hanging around the house relaxing. Most of us slept until noon.

I don't know how I missed this. Ive had a creative week over here. Monday night I made this delicious salad. My parents brought me lime Olive oil and coconut balsamic vinegar. I made a lime coconut cilantro dressing over spinach with mango red onion chicken and toasted coconut. Delicious!
