I have some beef ribs in my freezer from our half cow. I'm not sure how much meat they will provide, so I'm also going to have dh grill some burgers alongside them for dinner tonight.

My people probably can't really tell a difference either. I'm definitely more of a foodie.
The first time I made this recipe I did the lentils and meat separately and everyone, even meat loving dh, thought the lentils by themselves were good. None of us are vegetarian though so I would probably only do lentil again if I was out of meat. Otherwise, I'm happy to combine them to get more fiber in our diet. Tacos is definitely one of my go to just toss things in to it for seasoning ( cumin, ancho chillies, chipotle chilies, salt - there is always also garlic and onion cooked in) and the fight is always to not make it too spicy for my family. Tonight is rissoles (kind of like a hamburger pattie) with vegetables. I've just made them and they are in the fridge ready to cook when I get back from taking the youngest for a driving lesson
