Default Blueberry Muffins

Does anyone have a really delicious blueberry muffin recipe? All of the ones I've tried turn out too chewy or dry.

Default Re: Blueberry Muffins

I have one I have been making for DH for almost as long as we have been married. He loves them. They are crisp on the top and soft and chewy on the inside. But, they are butter/white flour/white sugar/egg yolk. I call them "blueberry cupcakes".
You also need to use a mixer.
I have tried substituting whole grains and unrefined sweeteners, and those are not similar muffins at all.

It is from a Martha Stewart Living magazine from July 2000 I think.
Here is the recipe:
6 tablespoons unsalted butter, room temperature (I use salted)
3 cups, plus 2 tablespoons all-purpose flour
3 teaspoons baking powder
1 teaspoon salt
1 1/4 cups sugar, plus more for sprinkling
1 large egg
2 large egg yolks
1 teaspoon vanilla extract
1 cup milk
1 3/4 cups blueberries (or any chopped fruit)
Preheat the over to 375; Do whatever you do to your muffin tins.
In a large bowl, whisk together flour, baking powder and salt; set aside.

In the bowl of an electric mixer with paddle attachment, cream butter and sugar on medium speed, until fluffy. Add egg, yolks and vanilla;
mix until well combined. Reduce speed to low.
Alternately add reserved flour mixture and milk to mixer, beginning and ending with the flour.
Gently fold in berries by hand. Divide among muffin tins and sprinkle generously with sugar. Bake until light golden, about 20-25 minutes. (Martha said 30, but that burns mine)
