The theory looks amazing, but I'm not sure on the application just simply due to size. I struggle to envision being able to put enough food on one roasting pan for my family.
I roast veggies regularly, and it takes the whole pan to just do those. But maybe I eat an irregular amount of roasted veggies for dinner.... Which could very well be true. I'd love to see some pictures of the actual dinners on the pan for anyone who is willing to share.

I love these ideas! I'm trying to do more meals that I can do prep work on during the weekend to make them easy to get in the oven after work. A lot of these could be done that way (just put in baggies in the fridge and then dump in sheet pan). I would need 2 sheet pans to feed my family, but have a convection feature on my oven, so I think it's doable.

I love this idea too! I also can use a whole 9x13 pan for vegetables, especially since you don't want them all on top of each other.
Does this need to be one of the metal sheet pans, like a cookie sheet, but with edges? Shallow and large? I don't have any like that- just 9x13 glass and metal pans. They probably aren't that expensive. Hmmm... I need to come back to this and get recipes!

I think a big part of my pain is that we have a wall oven that came with this house when we bought it and it's on the smaller size. So I am limited with how big of a sheet I can fit in there.
Makes me super sad. I fantasize about a commerical size oven.
