This is why I am willing to do sourdough. It tastes better and saves money so to me it's worth my time. The other things I have done: pickles, sauerkraut, kombucha, kefir, yogurt I always felt like it was a ton of work and not always very budget friendly and the taste was, frankly, mediocre at best. I made kombucha for such a long time because we love store bought kombucha. I did so many things With second ferments and adding fruits and it was still just not what we liked. I've been doing kombucha for 2 years this month, I believe! Store bought doesn't taste good to me at all anymore. It's so weak!

My first batch of fruit kavass looks ready this morning.

Slightly OT question but has anyone ever looked at their cultures and ferments under a microscope? Just wondering if you'd be able to see any of the good bacteria or yeasts.

Has anyone with a microscope scoped out their culture yet? The closest we have is s magnifying glass. I think I will have my kiddos compare plain cabbage to sauerkraut, flour to saur dough and draw/ describe it in their "science Journals". No bacteria would likely show up with just a magnifying glass but it sounds like a fun project!
