I used whole wheat flour and found them a bit dry, so added about a 1/4 cup of applesauce. YUM . DS and I ate almost 1/2 the pan for lunch one day.

OH MY WORD! I am eating a warm piece of this right now with a thick vanilla glaze.... (Halleluejah chorus play in the background) These are awesome!
I used 1/2 c. graham flour (cause I just had some left over) 1/2 c. wholewheat and 1/2 c. all purpose. I turned it out like a cake and glazed it while still warm. It reminds me of a really rick, super moist carrot or spice cake (and it smelled like a pumpkin pie while baking.. yummy!) Thanks for this recipe! |

I know this is old, but these bars are sooooooooo good. And its the pumpkin time of year again. Kids love these, I have taken them several places and the kids devour them. My two and three of my friends kids ate a double batch at church last week.
These bars translate really well to GF. I use honey (i know, not vegan) instead of sugar and just sub a GF flour mix for the ww flour, I think the turn out about the same crumbliness.

dude, abbiroads, you are my new best friend - I was JUST going to dig this up this very morning and ask if it could be done GF for my mom's group at church that has many GF mamas (who usually bring their own snacks to be safe - it would be so nice to provide something!) So GF flour mix is something I can get at like Fred Meyer or somewhere? And the honey substitute - do I need to use honey, not sugar, for GF folks? Do let me know, I am so excited to do this for these mamas!

You should be able to find a GF flour mix at your regular store. I usually get it at the HFS cause its cheaper. I used honey cause it helps with the crumble factor. Brown rice syrup or agave nectar would work too, I'm sure. The bars are already kinda crumbly and gf makes that worse.

I was just coming here to look for frosting suggestions for a pumpkin bread/cake recipe that seemed kinda like pumpkin brownies. Cream cheese frosting sounds delicious. How would you make that with tofutti cream cheese substitute?

I think in other recipes, you use slightly less honey than the called-for sugar. But with the WW flour, and the tendency toward dryness, I think it would be good to use the full amount. (like abbiroads said )

OT How long is canned pumpkin good? I've got some, but I can't remember when I bought it. Maybe I should just go get some "fresh" cans.
