I made coconut curry chicken tonight for the first time and WOWZERS! It's AMAZINGLY delicious. I love the taste of curry!

I roasted a turkey. 16 pound bird. First attempt at "buy turkeys at cheap prices to save money on chicken". I made roast potatoes and carrots, with stuffing/dressing and gravy.

I now have a ziplock bag of bones for broth, and at LEAST 3 meals worth of turkey.

I'm debating trying something entirely different for dinner tonight.

Not sure what.

Thinking maybe trying a new fish? We do lots of salmon. Have had whitefish and tilapia.

I want wild caught, so that will limit my options, I"ll just have to see what the grocery store has, but does anyone have a particular fish and recipe that they love?

Trying to come up with a super easy chicken sandwich for tonight...maybe just breasts in oven on a bun with condiments...but maybe something more flavorful? Ideas?

I am hoping DH and I will get to go out tonight (he's finally home after a two-week business trip and my parents are here to babysit)...we've got a Groupon to use for an upscale farm-to-table restaurant in town. Probably my parents and the kids will eat smoked turkey from the freezer, with sweet potato fries and green beans.

If I do oven baked breasts, I like to pound them thin and then bake them at 425. They come out so moist like that.

You could also cook then, then shred the meat and stir in something like cream cheese or a mayo/herb combination to make a creamier sandwich filling. Or bbq sauce.

Broccoli cheese soup (I used 4 cups of chicken broth and an entire brick of neufchatel cheese (lower fat cream cheese) in addition to the other cheeses, baguette (maybe I'll remember to get a pic).
