Last night I cooked on the grill. I cook flat iron steaks and chicken tenders. Home-made rice pilaf and fruit to go with it. Yum!
Tonight--I think shepards pie? Or meatloaf?

Tonight I'm cooking a leg of lamb. It's our Good Friday dinner tradition. Actually, last year was the first time ever, but I love the symbolism (Lamb of God) and I love the meat, so we decided to make it a tradition.

Would you share your recipe for leg of lamb? I bought one last week when it was on sale, but stuck it in the freezer, so I can't cook it tonight. I have a recipe but I don't remember it being fabulous last year, so I'd love to know yours.
I think we're going to do white chicken enchiladas tonight, with black bean ragout and cilantro-lime slaw.

I did also do slits in the lamb and put in sliced garlic because the recipe I did last year (and can't find this year) did that and it was delicious. I am not making the sauce tho. I am planning to make a Tzatziki sauce to eat with the lamb because I think my kids will like the creamy sauce better. http://www.myrecipes.com/recipe/tzatziki-5 I'll let you know how it turns out.

Gaps friendly meatballs with lots of veggies in them for the kids
Zucchini "noodles" with tomato sauce Oven roasted Brussels sprouts and sweet peppers.

Here's my update on the lamb. It turned out spectacular! So juicy and moist and tender.
AND the sauce was AH-MAZing. So delicious. LOVED dipping the lamb in it.

I think if I make the lamb recipe I'll use the original sauce...Mediterranean flavors are either just not my thing, or else I'm just not used to them. I don't care for cucumber, not a fan of mint in savory dishes, and I hate dill!

I made a mash up meal of sorts.
butter turkey ravioli with broccoli. one of my local grocery stores had a tasting with their store brand roasted vegetable ravioli, done up with butter chicken and sauce. I make good butter chicken, and had leftover turkey, so I tried it. I usually do steamed broccoli with butter chicken, but was running out pots so I tossed the broccoli in with the ravioli for a couple of minutes, and mixed it all together. 4 out of 5 of us liked it. |

we're doing chopped Thai chicken salad tonight - not sure what the boys will eat. probably either leftover enchiladas from last night, or a hodgepodge of what I can round up from the fridge/freezer.
