We had our big Easter dinner last night...and we had next to no leftovers! 3 pieces of roast potato, 5 asparagus spears, and 2 small pieces of lamb. So DH ate it for lunch today, and my leftovers for supper plan is needing a re-visit!

Yea, all our Easter leftovers are pretty much gone.
Tonight I'm cooking pasta casserole, steamed green beans and broccoli and homemade bread for the kids. Dh and I are eating grilled chicken/spinach/feta sausages and roasted veggies (asparagus, beets, broccoli).

Easter leftovers are gone here too..except for carrot cake..can we have cake for supper?
I think we're having spaghetti and maybe breadsticks..if you don't have salad greens,what veggie can you serve with pasta? |

I served my kids pasta casserole (which is essentially spaghetti-esque) for dinner tonight. They had steamed green beans and broccoli on the side, along with bread and butter.

I've got leg of lamb in the oven. Roasted cauliflower and asparagus to go with it...except my boys aren't giant fans of either so I'll also have to do raw veggies or something else for them. I normally wouldn't make two "odd" vegs like that the same night but they're what's in the fridge and needs to be used.
I'm kicking myself for not getting and making my friend's recipe for naan (which tastes a million times better than the traditional Jewish flatbread I made last Easter). We have no bread to eat with it. Alas.

It was fantastic! Lots better (and simpler and healthier) than the recipe I used last year. The meat was SO tender. I used the sauce (more of an au jus) with the recipe, and it was delicious.
