It appears to never be cooked in this video. Ive always assumed the eggs in mayo are always raw. They use pasteurized eggs if that's what you mean by cooked. There are some recipes that call for stirring the egg over low heat but I'm not that convinced that that serves any purpose. |

I make my own and use Grapeseed oil in mine. I use a dash of vinegar, not lemon, for the acid. I make it in the food processor and the oil is added using a solo cup with a hole poked in the bottom just big enough to drizzle the oil out. I add a bit of oil and when it binds then start drizzling the rest in. My recipe makes about 3.5 cups. I can post the recipe when I get home. I think mine tastes similar to Duke's.

I use this recipe when I make it myself. Either olive oil or avocado oil work great.

Mayonnaise is a raw sauce. My assumption is that commercial mayo is simply pasteurized to kill any harmful pathogens that could come with the eggs, but is otherwise still raw.

I've been making mayo in my food processor for years. I'll post my recipe later. It's super easy and fail-proof.
When I buy mayo I buy Hain safflower mayo. It is expensive, though. |

Waiting for your recipe. I always prefer to make things that are tried and true by someone I know. I have been meaning to but haven't done homemade mayo yet...

2 whole eggs
4 egg yolks 1 tsp mustard (dry or prepared) 2 Tbsp lemon juice (my dh prefers less) 1 tsp salt 1/2 tsp pepper (optional) 2 2/3 c oil of choice Put all ingredients except oil into food processor. Blend well. Using the drip reservoir or adding the oil by hand in a thin, steady stream with the motor running, add the oil. Refrigerate up to two weeks. For the oil, you can use up to 1 cup of melted and cooled coconut oil. If you use more than 1 cup the mayonnaise will get hard when refrigerated. |

I love mayo made with olive oil but my family hates it. Just FYI olive oil mayo has a very strong flavor. I usually use sunflower and expeller-pressed coconut oil.

It's usually listed as "vegetable broth" on the label (in the USA) but it's some kind of soy liquid.
I don't know if this how it's packaged in other countries, though. |
