Help me with white rice
I am trying to switch to white rice because of the arsenic.
I had a wonderful bullet proof recipie for my short grain brown rice. I did it in the oven and loved it. I looked up a recommended white rice oven recipie and the rice is all mushie. It will work and would sture-fri up great but it really isn't want I want with my curry. Help me give me your best recipie.

I use my rice cooker and get great white rice every time. Do you own a rice cooker?

Perfect sticky rice (think Chinese restaurant)
Ratio: 1 cup of rice to 2/cups of water. Bring water to a boil add rice, return to a simmer and stir well. Cover I t and reduce to low. Let simmer with cover for 15-17 minutes (until no bubbles of water are coming up from rice). Leave it be until the timer dings don't lift the lid before! From More With Less cook book.

If you don't have a rice cooker, rinse 2 cups of rise in a fine-mesh strainer.
Saute it in 1T butter or oil until the grains are chalky and opaque. Add 1 tsp salt, 3 c water, bring to a boil, reduce to low simmer and cook 18-20 min. Off heat, put a folded kitchen towel on the pot and replace the lid. Let stand 10-15 minutes, fluff with a fork, and serve. Makes about 6 cups. (That's the Cook's Illustrated recipe)

I use a rice cooker for supreme simplicity but I've been working on adding different things to the cooker to see the results. So far I've been very happy.
I just threw white rice, water, olive oil, basil and garlic powder in the rice cooker. I'm sure it will be delicious.

For another method...
Rinse 1.5 cups rice. Drain and put rice in a pot with 2.5 cups of water. Boil uncovered until there are pits in the surface of the rice and most of the surface water is gone. Cover and reduce heat to low for 15 minutes. Let rest for 5 minutes before serving |

I've found that fluffing rice with a fork, putting the lid back on and letting it sit a few minutes before serving is important and really DOES make a difference. I do that when I make rice on the stove and when I use a rice cooker. (I've never used a pressure cooker for rice, but I imagine it would be the same.)

I've used my pressure cooker but it takes 25 minutes between pressurizing, cooking and depressurization.

It took about 8 minutes for all of it. I do a quick release. I add the water and turn it on "keep warm" white warms up the water while I'm getting the rice out.

The Instant Pot has slightly less pressure than a regular pressure cooker so I'd go with what you find. I love my Instant Pot for rice. It's absolutely perfect and I never have to worry about it scorching if I get caught up with something else.
