It was a hit, served with tortilla chips and spinach salad.
Tonight I'm making cheater huevos rancheros (using jarred salsa rather than make my own salsa ranchero).
Salad and pinto beans on the side.

I fired up the grill in celebration of 6o degrees! Hard to believe that just one week ago we were jn the midst of a winter storm that dumped 12 inches on us...

Grilled porterhouse steak. First of the year for us from our grass fed cow. So so so amazingly delicious! Grilled asparagus, sauteed zucchini strips and of course no steak is complete without onions and mushrooms.

We had a Southwestern Chicken Soup with a green salad last night because it got down into the 60's yesterday so it was finally time for soup...haha! California problems!

I used sweet turkey Italian sausage in links and just took the casing off and browned like ground beef. Turkey sausage needs a lot more olive oil not to stick to the pan. We also used four cups chicken broth mixed with the tomatoes rather than the three cups water for more flavor and we needed the extra liquid because I wanted to use 1 1/2 cups of arborio rice rather than one. It was really, really good!

I made a Swedish meatball-ish meal. 1 lb ground beef, browned with onion powder, parsley, salt and pepper, then simmered in 2 cups each beef broth and heavy cream until reduced into a sauce, combined with 8 oz pasta, cooked. I just sort of threw it together. Came out delicious!
