help me dinner tonight
SO I have defrosted either. 2 packages of much better for us free range chicken thighs and a fairly decent amount of organic produce and such..
or I have a budget friendly "tube" of ground beef.. This is one of DHS grab and go days. (home just long enough to eat before returning to work) honestly I'm leaning towards using the GB and saving the better stuff for tomorrow evening when we can enjoy it better.. Which means I need to decide what to do... other than spaghetti (trying to think of something else but could still if it came down to that)... other things I have to work with rice, (brown Jasmine wild ) GF pasta, tortillias (not GF but I can figure Margaret out regardless) potatoes, celery, carrots onions spinach kale spinach red/yellow mini peppers various frozen veggies apples chicken broth cream soups starters various spices milk cheese ummm I think that is it. We are fairly well stocked I'm just kinda out of ideas and want something simple but a bit different.

Re: help me dinner tonight
Do you have any BBQ sauce? Chicken thighs with BBQ sauce poured over the top are yummy baked. To make it a little more interesting, you can add a can of pineapple with juice before baking if you have canned pineapple. It's good with rice. Or you could do Hawaiian haystacks. I never heard of those until I moved to the western U.S. but they are yummy.

Re: help me dinner tonight
My fastest meal is usually nachos. I do taco-seasoned beef, cheese, and every veggie I think my kids will eat diced fine. Then I let them play Build Your Chip at the table. My Dh usually likes rice as well. In that case I usually let him just have a rice bowl dinner.

Re: help me dinner tonight
Just tonight on facebook I saw "prison tacos". Stand up taco shells in a pan, add a 50/50 mix of browned ground beef + rice (to make the beef go further) and a 1/3 slice of american cheese. Put it in the oven just long enough melt the cheese. The method on the internet was to feed them as-is, but I'm sure you can add some toppings (salsa, shredded cheese instead of american, peppers chopped and even carrots, even though they're not typical mexican toppings).
I am babysitting a friend's four kids for the weekend and totally plan to do prison tacos with inexpensive toppings

Re: help me dinner tonight
it was good it came out a bit "watery" more like a stew but I can't say my measurements were all that accurate so likely my fault. (too rushed) I probably should have drained the meat a bit more as well. However it was still really good and worth making again.
