We're having sausage gravy and biscuits tonight - it's a rainy day and I'm hungry for comfort food. The boy hate sausage gravy, so I'll make a veggie-laden egg casserole for them and then we'll eat off it for breakfast the rest of the week.

I'm going to try baking pork chops tonight. I've never done it but a friend told me she does so I'm going to give it a spin. Trying to decide I'm going to sprinkle it with ranch seasoning or something else (I have awesome blends from a local spice maker--makes it hard to choose!!). I hope they are yummy? I normally fry them so I am looking for a healthier alternative, lol.
Just serving plain ole raw veggies to go with.

We had biscuits and sausage gravy tonight too! We made them with half whole wheat flour to use it up! Kids still loved. And banana bread...tomorrow is trash day and I wanted those bananas eaten! Smoothie for dessert. I had a salad as well.

Lots of times when we have sausage gravy and biscuits, we'll have green smoothies to round out the meal, but my blender is out for repairs. Last night we had spinach salads with this new strawberry poppyseed dressing I found at Kroger. I had gotten away from store-bought dressings but lately I have just not been in the mood for going to the trouble or for balsamic vinaigrette. A friend introduced me to this low-cal Greek yogurt based roasted garlic dressing, sort of Caesarish, and then I found the strawberry one which is also yogurt-based and low-cal. Added almonds, feta, and diced Granny Smith apple--it was delicious and the perfect complement to the gravy + biscuits.
Tonight is an unseasonably cool/dreary day and DH requested soup. Specifically, the least-healthy soup I make Guess we're on a roll with the gravy + biscuits this week, so go big or go home, right? The soup is like the love child of broccoli cheese soup and chicken noodle soup. It's so delicious. But it uses...Velveeta I've tried multiple times to use real cheese and once I even went to the trouble of making "Velveeta" from scratch (it was strange...it totally worked) but it's just not the same. It might have been OK if we'd not gotten used to it the Velveeta way first. At least I use homemade bone broth and twice the amount of broccoli called for, so I figure it evens out

Not one of our usual main meals, but it's good for when we want something lighter...
Bleu Cheese Chips Melt 2 oz shredded Monterey Jack over 1 oz chips (I use store brand Lightly Salted Wavy). I do it in the microwave for about 15-20 seconds. Top with chunky bleu cheese salad dressing (I use Marie's brand). Sprinkle with chopped green onions.
